
Preheat oven to 350 degrees. Melt 3/4 cup shortening in a sauce pan over low heat. Remove from heat, let cool. Add 1 cup sugar, 1/4 cup molasses and 1 egg. Beat well. Sift 2 cups flour, 2 tsp. baking soda, 1/2 tsp. ground cloves, 1/2 tsp. ground ginger, 1 tsp. ground cinnamon and 1/2 tsp. salt. Add wet ingredients to dry. Chill and form into 2" balls. Roll in sugar, press down slightly onto cookie sheet. Bake 10-12 minutes. Cool on pan for 1 minutes and transfer to wire rack to cool entirely.
If you bake them a little longer and allow them to sit out on a plate, they get crispy and are great with coffee!
